Quinoa and Black Bean Stuffed Peppers

These stuffed peppers are stuffed with fiber too. Here are the fiber-loaded benefits of these recipe ingredients:

Ingredients

  • Bell peppers
  • Quinoa
  • Black beans
  • Corn
  • Salsa
  • Spices (paprika, chili powder, cumin)

Instructions

  1. Preheat your oven to 350 degrees F
  2. In a large bowl, mix together cooked quinoa, black beans, corn, salsa, and spices of your choice (I recommend paprika, chili powder, and cumin)
  3. Slide your bell peppers in half, cutting off the stem
  4. Place the bell peppers in an oven-safe dish and stuff them with your black bean mixture 
  5. Cover with aluminum foil and bake for 25-30 minutes
