Chia Peanut Butter Banana Boats

When bananas are overripe, they may not seem appealing anymore. However, you can use these overripe bananas to make a fibrous, sweet treat with a key ingredient: chia seeds. That’s the inspiration for this Chia Peanut Butter Banana Boats recipe!

Chia seeds are sometimes referred to as a superfood due to their nutrient-dense qualities. Chia seeds contain a number of nutrients that are supportive of health, including gut health. For example, one serving of chia seeds (3 Tbsp.) contains 9 g of dietary fiber, which helps support your gut. Here are a few other nutrients you’ll find in chia seeds:

One of the main reasons I enjoy adding chia seeds to recipes like this one is their versatility. Chia seeds can be used in salads, soups, baked goods, oatmeal, and fun, family-friendly desserts such as this recipe. My kids sometimes refer to them as chocolate sprinkles, but little do they know they are getting chia (wink!).

Ingredients

  • 3 ripe bananas
  • 2 Tbsp. natural peanut butter
  • 3 Tbsp. chia seeds
  • ¼ cup Milk or dark chocolate chips, melted

Instructions

  1. Line a pan with parchment paper. 
  2. Remove banana peels from bananas and slice the banana into four, lengthwise pieces.
  3. Using the edge of a knife or another kitchen utensil, scrape out the center of the banana flesh to make room for your peanut butter filling.
  4. Using a teaspoon, fill the center of the banana with peanut butter.
  5. Place the banana and peanut butter boats in the freezer for 10 minutes.
  6. In the meantime, melt ¼ cups of chocolate chips in the microwave. Stir the melted chocolate chips to ensure a uniform consistency.
  7. Take the frozen bananas out of the freezer and drizzle melted chocolate across each piece.
  8. Using your fingers, sprinkle chia seeds across each banana.
  9. Place back in the freezer to enjoy later.
